Most of the people around the world would like to have chicken rather than any other foods. Why? Why all of us like chicken the most compared to other foods? Because it’s relatively inexpensive source of protein and there are a thousand absolutely delicious ways to prepare it. Curry chicken is one of them and mostly south Asian people like to have this delicious dish. Even though it’s South Asian recipe, most of other countries would like to taste this dish. In this article, I’m going to show you how to make curry chicken. Almost all the people do this dish with lots of coconut milk for taste. But you can make this dish without coconut milk. Sounds good, right? Here you go.. I’m going to show you how to make curry chicken without a single drop of coconut milk.

How To Make Curry Chicken Without Coconut Milk
- Chicken – 1 Kg with/without bones. (I recommend chicken with bones for more tasty)
- Curry Powder – 3 Tablespoon (3tbs for medium hot, 4tbs for very hot, 2 1/2 tbs for mild hot)
- Tomato – 2 medium size
- Onion – 1 big or 2 medium size
- Turmeric powder – Required amount (Recommended 1 teaspoon)
- Salt – Required amount
- Garlic – 1 Tablespoon
- Ginger – 1 Teaspoon
- Oil – required amount
- Curry leaves – 10 to 15 leaves
- Cardamom – 4
- Water – Required amount (Recommended 500ml)
Preparation Before Cooking
1 – Cut the chicken into small pieces or whatever the size you want(Big pieces may not cook well inside). Wash those pieces 2 or 3 times in the water and keep the chicken in a dish. Add 1 teaspoon of turmeric powder and required salt(recommended 1 teaspoon) into the chicken and mix well enough. Now keep that mixed chicken in a safe place for 15 minutes.
2 – Cut the tomato into medium size like 8 or 10 pieces from one tomato. And chop the onions too.
3 – Grind garlic and ginger well enough and keep it in a small saucer
4 – Cut each of the Cardamom into half and keep it safe
Cooking The Delicious Curry Chicken
Step 1: Keep the heavy-bottomed saucepan(I highly recommend this Saucepan) onto the stove and put some oil into it. After the oil gets enough heat, put the chopped onions and curry leaves into it. Stir it well for about 3 to 5 minutes or the onion gets light golden color.
Step 2: Now put the ginger and garlic paste into it and stir for another 1 or 2 minutes.
Step 3: After that, put the turmeric and salt mixed chicken into it and mix it up very well. Now you can close the saucepan with its lid. After 5 minutes just open the lid and put all the cardamom and mix it up very well again and close the lid for another 5 minutes. After that, open it and see whether the water is still at the bottom or not. If there is no water at the bottom, go to the next step. If there is water wait until all the water at the bottom goes away.
Step 4: When you find there is no water at the bottom, put some more oil(recommended 3 or 4 tablespoons) and fry the chicken for 3 to 5 minutes. When you fry the chicken, don’t stir too many times, because, when you stir too many times, the chicken pieces easily ripped into very small pieces.
Step 5: After that put the recommend curry powder(3tbs for medium hot, 4tbs for very hot, 2 1/2 tbs for mild hot) and then add required amount of water into it and mixed it up well. Now again you close the lid for 5 to 6 minutes.
Step 6: After that, open the lid and add the chopped tomatoes into it and mix it up and get some curry to taste. if the salt is not enough put some more salt for your taste and then again close the lid for another 7 to 10 minutes.
Now just take off the saucepan from the stove and taste it with Rice or Roti or Bread or any other such items.
